This actually happens to be my husband’s favorite homemade treat, so these muffins make an appearance in our kitchen pretty often. I love making them at the beginning of a busy week because they work perfectly for quick breakfasts, afternoon snacks, or a little sweet treat packed into lunch boxes.
One of my favorite things about this recipe is how moist and flavorful the muffins stay for days after baking. They’re simple, comforting, and made with basic pantry ingredients most families already have on hand.
These muffins also make wonderful homemade gifts during holidays, birthdays, or simply for sharing with neighbors and family.
Another thing I love about this recipe is how easy it is to adjust for your own family.
Some families enjoy adding:
- chocolate chips
- raisins
- peanut butter
I’ve personally added 1–2 tablespoons of peanut butter before, and they turned out delicious. You can also leave out the walnuts completely if your family prefers them without nuts.
If you’re trying to reduce processed sugar, honey makes a great substitute. You can truly use whatever sweetener works best for your household.
I’ve also seen families swap whole wheat flour in place of white flour for a heartier option. If you decide to add flax seed, simply replace 1 tablespoon of flour with flax seed.
And if muffins aren’t really your thing, this recipe works beautifully as banana bread too.
Simply pour the batter into a greased loaf pan and bake at 350°F for 55–60 minutes, or until a toothpick inserted into the center comes out clean.

Homemade Banana Walnut Muffins
There’s just something comforting about homemade banana muffins baking in the oven.
Warm, soft, full of banana flavor, and just enough crunch from the walnuts — these are the kind of simple recipes that make a house feel like home.
This recipe is easy, beginner-friendly, and perfect for using up overripe bananas instead of letting them go to waste.
🍌 Homemade Banana Walnut Muffins

- 4 very ripe bananas
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs, room temperature
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon homemade vanilla
- 1 cup chopped walnuts
👩‍🍳 Instructions
Step 1: Preheat the Oven
Preheat your oven to 450°F.
Line a muffin pan with liners or lightly grease each muffin cup.
Step 2: Cream Butter, Sugar, and Bananas
In a large mixing bowl, combine:
- softened butter
- sugar
- ripe bananas
Mix until mostly smooth.
Step 3: Add Eggs
Add the eggs and whip the mixture for about 1 minute until well combined.
Step 4: Add Remaining to Wet Ingredients
Add:
- baking soda
- salt
- homemade vanilla
Mix just until incorporated.
- Step 5: Add Flour
- Slowly add the flour and mix only until the flour is fully moistened.
- Do not overmix.
- Overmixing can make muffins dense instead of soft and fluffy.
Step 6: Fold in Walnuts
Gently fold in the chopped walnuts just before dividing the batter into the muffin pan.
Step 7: Fill Muffin Pan
Divide batter evenly into prepared muffin cups, filling each about 3/4 full.
Optional:
Top with a few extra chopped walnuts before baking.
Step 8: Bake
Bake muffins at 450°F for 6 minutes.
Without opening the oven door, reduce the oven temperature to 350°F and continue baking until a toothpick inserted into the center comes out clean.
This usually takes an additional 12–16 minutes depending on your oven.
Step 9: Cool and Enjoy
Allow muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
Serve warm with butter or enjoy as-is.
🌿 Notes
- The riper the bananas, the sweeter and more flavorful the muffins will be.
- These freeze well for quick breakfasts or snacks.
- Store in an airtight container for 2–3 days.
